Healthy Margaritas for Cinco de Mayo!

In anticipation for Cinco de Mayo, I am dedicating this post to the topic of healthier festive drinks. When I think of Cinco de Mayo celebrations, margaritas definitely come to mind. However, anytime that I am drinking a beverage other than water, I can’t help but to be mindful of how the calories and sugars add up. And they can add up very quickly. When it comes to liquor I try to stick with the clears. Luckily, margaritas can be made with silver tequila, which is clear! Clear liquors like silver tequila, vodka, gin and clear or white rum have less sugar compared to the darker liquors. So remember, the darker the liquor, the bigger the hangover. One serving of clear liquor will contain about 96-110 calories and no carbohydrates, but that’s just for the liquor without any mixers.

Refrigerator Chia Seed Jam – 3 Flavors!

Refrigerator Chia Seed Jam is a much healthier alternative to store-bought jam. This jam is one of the easiest recipes to make! No cooking, no canning, no pectin and only natural ingredients! This super-easy and very healthy jam is made with just berries, a little natural sweetener (if any) and chia seeds! That’s it! Traditional jam relies on pectin to gel, but this jam gels with the help of chia seeds!

Jicama

Jicama has thin brown skin and crisp, juicy, white flesh that is mild in flavor.  It’s flavor resembles a cross between a water chestnut and a pear.

Crock-Pot Moroccan Stew

This recipe is so simple to prepare and will make your house smell wonderful!  It is great served over quinoa or rice.  For this recipe I used whatever vegetables I had on hand, which included carrots and kale.  You can add in other vegetables as well like yellow and red peppers, cauliflower, squash or sweet potatoes.
